How To Cook Ekpang Or Ikokore With Yam

 How to cook ekpang or ikokore with yam. This pot of yam ekpang has been waiting for too long. I promised to post on Sunday but couldn’t. I wanted to do all that is necessary before posting. I will update with cooking steps later please. This yam ekpang was cooked with the yam we all use for pounded yam.

 

The white yam we boil and use for porridge. NOT WATER YAM.


INGREDIENTS:

1 small tuber of yam (smoothly grated)
4 eggs
2 medium sized smoked catfish
Scent leaves
Crayfish

Pepper sauce
Palm oil
Onions
Seasoning cubes
Salt to
taste
Water

A serving of yam ekpang
To cook ekpang with yam. We use Nigerian ekpang nkwukwor recipe.  The only difference is that when yam is used, we add raw eggs to the grated yam and mix before wrapping in leaves to cook.

For ikokore, you just cut and drop in the boiling water without wrapping. Cocoyam leaves, green amaranth or ugu leaves can be used. For this, I wrapped with scent leaves.

  3. Abeg Eya where r u from? Dis is now Ekpang oooo jus u funkify dis one. We don't add egg 2 it pls. And no periwinkle. Its a No frm me!

  4. MADAM ITK, EYA DID NOT USE WATERYAM. HAVE YOU EVER TRIED COOKING EKPANG WITH ORDINARY YAM? IT WILL NEVR HOLD WITHOUT THE EGGS.

    INSTEAD OF PRAISE HER FOR BEING CREATIVE WITH YAM YOU ARE HERE TALKING TRASH.
