How Long Should We Store Food And Vegetables In The Freezer?

Aunty Eya and WC readers, please kindly share with me how you store fruits and vegetables in the fridge or freezer. I am a real dummy in that area. The Ogbono soup I cooked three weeks back still looks Okay this morning but I'm scared of serving it to my family. Normally my food stays one week and it's finished. Three weeks is a bit too much and I don't want to serve this soup until I am sure.

Secondly, I need tips on what foods to store in the fridge and what to store in the freezer. When I keep my vegetables in the freezer, they become frozen and by the time they are brought out to defrost, they become too soft to use. When I store in the fridge,
sometimes they don't really last long cos I see moulds on top. Am I keeping them for too long or just preserving them wrongly?

Again,Is it OK to store a pot of soup for up to a month? Please I need to know because my neighbor says preserving food for long can lead to food poisoning and I can't afford to take any risk.

    For vegetables, wrap them up in used newspapers and store in the fridge, they will look very fresh whenever you are ready to use them. As for storing food like soups and stews in the freezer, as long as there is light and the food is frozen, it should be fine. I store food for more than a month and there is nothing wrong with my food when we are ready to eat.

  2. In ma home, we store food in d freezer til we get around 2 eatin dem. Prob only arises wen electricity isn't steady and d food freezes, thaws, and freezes ova n ova. Wen its spoilt, u ll knw its spoilt.

    When there is constant electricity, you can even store for years! Its the nigerian situation that makes food get spoilt easily cos once power is gone, d food begins 2 defrost, giving rise to micro organisms that thrive in the temperature btw freezing point and just before freezing point. So in dis country, I wld suggest 2 weeks for soups max, except if ur freezer doesn't go off at all! I av kept raw fish in my freezer in the Uk before for 1 year,7 months and it remained fresh!

    I store lots of stew and soup 4 my siblings b4 travelling and it last 4 like 2 to 3 months i still come back and meet some, and we continue eating den till it finishes. Even wen am around we don't cook often, we cook once in a month and till it finishes we wouldn't cook again. Luckily we have constant lite and my freezer is always blocked, so once d is lite u are covered my dear. Tips 2 having ur freezer always blocked- use plenty sachets of pure water 2 make foundation and allow it 2 block den put ur plates on top, onces its very blocked it can keep ur stuff inside 4 days wen d is no lite. So d more ice blocks u have inside ur freezer d longer u have ur food frozen wen d is no lite.

  7. You can store for as long as a month but once the food thaws, please reheat(coz of micro organisms) and take it back to the freezer instead of allowing it to freeze back incase the power is restored at that point.

    @anon 9.15 do u stay in Nigeria; sure ds ur strategy won't jst work whn we only av light once in 2wks and can only afford to put on generator 4hrs daily
