Birthday Preparation

Birthday preparation. Hello Aunty Eya,

How’s your day going? Trust fine.
 
Please ma, i need you to do me a  BIG favour,my birthday is coming up in two weeks time and i intend having a small party in my Bf’s house(his idea).
 
The challenge I have now is that my BF has bragged so much about my cooking skills 
(thanks to your blog)to his friends and now they’re coming to wine and dine with me on my birthday.
 
Kindly give me  an EXPO on  how to make small chops i can prepare with a small budget,(maybe fish or chicken in pepper kind of recipe),and other fast dishes i can prepare to make that day a special one. Pepper soup is on my list already.
 
You could also help me post this to get ideas from my fellow blog readers too.

  1. maybe diced dodo nd gizzard stirred in fried stew, meatpie, puff puff,fried fresh fish, chin chin,spicy chicken,fried meat stirred in fried stew on d stick together with sliced tomato and onion and if u wana go all d way lool rice and ayamashe, fried rice, jollof rice but op d stress won't be too much..its ur bday so dnt overstress..happi bday in advance

  2. Well 4 small chops, its ur bday so dnt "kill" urself o. U cn do stick meat,puff, samosa n gizzard. Den 4 fud, do jollof rice, cos it lasts longer dan fried rice. Hapi bday in advance dear. Oma Baby.

  3. If you have a coal pot or grill, you can do chicken wings and turkey wings. Have them cut each turkey wing into 3 pieces at the coldroom. Clean the meat and season with salt, maggi, ajinomoto, black pepper, ginger powder (use lots), blended onions, 2 spoons of sugar, soy sauce, blended ata rodo and tatashe, half a pack of pineapple juice, the juice of one lime and one orange and a full cup of oil. Mix well and leave overnight in the fridge or freezer. Grill skin side down first over medium heat then turn and cook slowly on the other side. Do not poke with a fork. The yummiest bbq you've ever had.

Ok let me see how this can work,you can simply hire me to help you make puf puf,samosa,spring roll,pepper shawama and Irish potato /chicken sauces garnish with veggies like carrot,green beans and sausage. all should cos 20k am sure. mail me fastlinktravelsltd@gmail.com. just wanna do it for fun aspa you're a WC family member that's if you reside in Abuja.

  9. =)) Thanks guys. Ma binu that I made you drool. My restaurant is coming soon. You can eat it anytime you like:). It does really well in the freezer too. I do a whole carton of turkey at a time which is 10kg and after the wobias are done, we still have about 4kg which is fantastic with garri and cold water and epa any day.

  11. For tilapia, no because it's so mild but catfish and croaker can take anything you throw at them. For those I use soy sauce, caramelised onions and peppers (fry 3 onions slowly until sweet and sticky in about 3 cooking spoons of oil then add sliced red and green peppers and ata rodo if you like it hot till the peppers wilt), knorr, black pepper, salt, grated fresh ginger and cilantro if you have it fresh. Leave fish in mixture overnight and wrap in banana leaves with a little bit of the marinade and grill. It helps that we have a plantain tree lol. You can definitely use foil instead or put directly on the grill but be sure to oil the grill first.

  12. Feel kinda bad since it's your day. What's your budget and where in Lagos? If you'd like, I can make you 10kg of turkey and 5kg of soft chicken wings for 18k. I can add pasta salad and spicy thai fried rice for 5k. Strictly cost price. That feeds about 25 people. Let me know dear.

  14. @anon 10:30,don't i just love you for all your support at making my day a special one,but i don't have a grill neither do i have a coal pot of my own,but i can get a coal pot if i look for,so how do i grill with it?looking forward to your response.thanks a bunch.

  15. Shallie thank you. It's money o. Scary how expensive starting up is but I'm working on it. @Cream, there's a message for you below. If you'd like to be more hands-on, get a fairly big coal pot. Fill with coal layered with newspaper and kerosene. Light and fan the fire till there's no flame and the coals are red/white. Place 4 large, equal sized stones in the corners and place a clean oven rack on them. Make sure it sits well and you have about 3 inches between the rack and the coals. Arrange skin side down and grill until brown and skin is thinner. Turn and grill on the other side. After about 10 minutes, turn again for another 5 – 10 minutes. Voila:)

  16. I suggest you add Nigerian club sandwiches to your list. They look great, are tasty and easy to make. You don't even need to light a stove. 🙂

  17. You can add Prawn crackers too to your menu. A packet is about #250. This should be enough cos it's quite much. All you need to do is dip it into your oil and fry. You can serve it with your kebab or tiny meat pieces arranged on tooth pick and garnished with onions and green pepper.

  18. Creamberry! Inasmuch as I love d bbq suggestion, I would love u to try it on ur own first b4 d d-day. Bbq can be very tricky, u may add excess seasoning and stuffs! I think u shld do small chops and club sandwiches too! #myopinion
