How To Make Coconut Carrot Salad

How to make Coconut carrot salad. This recipe  is fast and easy to make. The only work involved is washing and peeling off

carrot skin, then shredding with the shredding part of a grater.

I enjoyed mine without dressing. Gave my Oga at the top Hubby with Italian dressing while the kids asked to eat theirs with Heinz salad cream. I would have loved to eat this with jollof rice but there was none at home.
Well, the  Next time I cook jollof or fried rice, I may just add a little of this to my already cooked rice and stir before removing from heat.

Eating this
salad without dressing was fun, although it reminded me of coleslaw, the taste is so different and yum.
I enjoyed the taste of coconut and carrots together and may also add this to my coconut rice.

  12. Would try this someday. The thing about this blog is it gives us a variety to cook. I tried the coconut rice with corned beef pepper sauce on Saturday, it was yummy. Also cooked onugbu soup for the first time today, u needed to see my hussy licking his plate. I jokingly reminded him that it is when the soup is delicious that he licks his plate. RME

  16. Madam Eya, you visit LIB, you try to get it's readers to come here, most of us found you from LIB. You see the fights go on there every minute, everyday. Readers insulting and fighting each other, people insulting the L herself. But she uploads everything. Guess what? Because all of that is what keeps her traffic up and the money rolling. And that's what keeps readers logging in even there is no news. So you see? You don't see her replying people that said her head looks like paw paw or deleting comments of readers fighting themselves. Her news posts are not unique, but she has the readers who drop comments and fight themselves. A full post of over 100 comments at times can just be everyone lashing at someone and insulting the person for their first comment. So, all of this is not new. If you want to commercialise your blog, such things will happen. Except you don't want all that. But truth is, you have dragged all the people that hate and fight on LIB to this blog.

  18. Aunty Ojay, this looks fabulous.. I've never heard of carrota and coconut salad and as I am someone who loves coconut so much I'm sooo trying this out with jollof rice for lunch.. Keep up the good work and also I have to say again, you should learn to ignore silly, rude comments on your blog.. You see them on every blog and the best you can do is ignore it before you give yourself high blood pressure over someone who may just be catching fun by saying stupid things.. Keep doing your thing and remain blessed.. Cynthia

That is how people will make fun of your hardwork co it';s the seed you are sowing. If not Aunty Eya, your husband never liked your concoctions anyway.

I hope you do remember to inform him they are not your original recipes, u cook from Aunty Eya's? I feel like calling you a goat, but I won't.

Carrot and coconut salad(Salad Cs) for me is another innovation and twist to making salads. Initially when I saw it, I was like hmmmm, nice one.

I think I'll pass with the coconut cos I'm not a coconut fan.

  35. @ Eya I personally enjoy your blog, I believe everyone has a right to their own opinions in life that's what makes us all different. I know some people can be hateful but i guess we all know by now that ''haters are always gonna hate''. As for me I read people's opinions on this blog, some i agree with and the one's i don't agree with i just ignore and move on quietly to the next post. The more people respond to comments that are abusive or they disagree with the more they empower the person to keep being hurtful/abusive. Truth be told it takes a lot of maturity and will power not to respond to some comments but trust me nothing annoys an attention seeker more than starving them of attention!
And for the rest of us, please lets show some maturity and restraint in our comment! I try as much as possible to follow this proverb that says ''BE SILENT OR LET YOUR WORDS BE WORTH MORE THAN SILENCE''
    Keep blogging and stay positive.

  40. @Dimma, I think you can but try with small amount of each to see if you would like how it turns out so as to know if you would continue that way or not.

I think you can get a compact shredder with several shredding parts. I remember seeing something like that on TV when the International Trade Fair was ongoing 2 years ago. The one I saw can be used to shred carrot, cucumber, cabbage, and even peel oranges, pawpaw etc.

Remember this: "cooking is experimenting and the Kitchen is the Laboratory!"(My words!)
