How To Cook Garden Egg Tatashe Stew

Garden Egg Tatashe stew with boiled yam.

I know most of us are aware that garden egg is used for weight reduction. This
garden egg stew can be served with rice, plantain, potatoes, and other meals. It is very tasty. The flavour of fried crayfish makes it so yummy. It’s very easy and fast to cook. I do this sometimes, chop and fry at other times. Some people peel off the skin before cooking but I like the fibre. Garden egg cooks fast. It gets really tender way before the yam or plantain is cooked.
 
For those who can’t cook the two together, you can boil the eggplant in a separate pot.
When you cook this dish, please don’t forget crayfish and smoked fish.

Ingredients for garden egg tatashe stew:

  1. Garden egg
  2. tatashe
  3. onions
  4. crayfish
  5. soya oil
  6. smoked catfish
  7. water
  8. seasoning cubes
  9. Salt 
  10. Water
Egg Plant is cooked soft and ready for blending or pounding
Tatashe, boiled egg plant and onion for blending
Blended tatashe, onion and garden egg
Frying crayfish before adding the blended mixture

A serving of eggplant tatashe stew with boiled yam

This stew is well-loved by children, but not with too much pepper.

  1. This is what We ate for dinner with plaintain and yam but I didn't add tatashe and I don't like it smooth I mash it then fry with spring onion,yellow pepper and green pepper,add crayfish,dry pepper and grill fish.my family loved it

  2. I love, my friend prepared this a lot when we were in school.

    Never brought myself 2 prepare it.

    I also like it rough(not smooth) that way I chew on it, and I like it very fried…almost burnt. Lol

    And I think its best with Yam, can't imagine it with other foods…

    Aunty Eya, thanks 4 reminding me what kinda meal I will prepare when I lay my hands on Abuja (Gwari) yam again..(Its scares her in lagos)

    There is another sauce I miss a lot, fresh pepper, onion and cryfish..all pounded 2geda and fried, add a little scent leaf and dried fish if Ʊ so wish …used 2 b a life saver esp when taken with rice or yam….try it.

  3. I've just learnt 2day that garden egg is used for weight reduction, thanks for d tip. This is a regular in my house coz its my husband's favourite meal. I don't blend d garden egg, I mash it after cooking it with the yam and fry with chopped onion, pepper, tomatoes and sardines.

  4. Garden egg is anyara in igbo ryt?????????? R there so many species cos d one am seeing here is purple…hv neva seen a purple garden egg,its only white n green..pls through more lyt?

  5. Good morning Dimma. The white and green ones can be eaten raw, this purple one I think is mainly for cooking. I buy the purple ones from supermarkets but I'm sure if you ask in the market, you will get them.
    They are very tasty.

  6. Dimma me 2 oooo, any way I love it but not wit tatase , plenty fresh pepper , 2 or 3 tomatoes , very nice n it better to mash it . I don't like it smooth. Oyin

The green and white ones are the home grown ones while the purple one referred to as Aubergine are imported (I think as I am not exactly sure)I prefer the green and white ones tho as they have more seeds and are chunkier. I also prefer to mash them and add to the stew rather than blend. I must confess this is my first time of seeing it being blended with pepper. Aunt Eya, eku ise!!!

  8. These purple ones are also very tasty and healthy. The one I used here is the Chinese eggplant, there are other purple ones like The Indian and Japanese egg plants. They are also very good.

    I like to cook with male egg plants cos they have less seeds in them and are not bitter.

  9. Thank you Omogekofo, When I want it rough, I don't blend.Try Ada Onitsha yams (Yes that's what they are called in Abuja) Those are very white yams that you will enjoy. I prefer Ada Onitsha yams to Gwari yams o.

    This your recipe sounds interesting and I think I won't take time to prepare, wish you had the pics.

  12. There is a difference btw the garden egg and the egg plant. Garden egg is white or green while the egg plant is purple.

  14. Why are you interchanging between garden egg and the egg plant? Which one did you actually use because they are two different things except you used both. Garden egg is white or green and round while the egg plant is purple and oval.- dessy

  15. I dunno which kind of sardine that person added but I always add sardines to mine n it comes out delicious. Don't believe everything u read till u tried it urself.

  16. U are right, d purple ones are Aubergines (in d Uk). Very good for eating rice either stir fried with other vegetables or steamed.

  17. I guess 'delicious' means different things to different people. After all our taste buds are all different and we can't all like the same thing. Garden egg sauce is my best food. I bought regular sardine fish from the market and tried it with my sauce. It was awful. I cook Garden egg all the time that tastes superb. So, when I say that one was awful, it was cos I threw it all away. But anyone can try it sha. Whatever rocks their taste buds. It didn't rock mine though.

  18. Exactly. I thought so too. The bad part is that I don't really enjoy garden egg sauce with any other type of oil asides palm oil. Funny enough, I've tried sardines in a mixture of palm oil + vegetable oil stew and it came out really nice.

  19. Not really Aunt Eya. What most people know as 'garden egg' in Nigeria is the garden egg itself. So, most people are used to the common ones you can get in the market which is known as 'garden egg'. Which is either white or green.

    For me, I was just looking at that purple thing on my screen and was like "Are those garden eggs?". I guess I will try the sauce with this egg plant to see which tastes better.

  21. I TRied makin it wt d common garden egg and it came out so bitter.nobody could eat it.if am using the common{white orgreen)garden egg,how do i get rid of the bitter taste..tnx

  22. Ajebota, sorry about that. Try to bite and chew a little of the green or white ones to be sure it's not the bitter specie before cooking. Some are naturally bitter and there's nothing anyone can do.

  25. these purple ones aurbergine are actually sweeter .to avoid the bitter taste please use the creamy/butter coloured gardens . i love dem slightly bitter

  26. Hi Damilola, sorry about that. It's the tatashe that gave it that red colour. Next time try pounding or mashing so it doesn't turn smooth
