Chicken Soup With Stock fish and Smoked fish

Chicken soup with stock fish and smoked fish. This Nigerian soup is best cooked with lots of peppers. It is fun when
you eat it and see the sweat dripping from your fore head on a cold day. I served this like a meal but enjoyed mine with boiled rice.  I don’t know why, but I seem to enjoy my boiled rice more with soups than with tomato stew. When I eat rice with tomato stew, I can’t take as much as I do when I eat with other soups.  If I want to serve this soup with any swallow ( amala, eba, pounded yam, starch etc), I will add
a little pounded yam in there to thicken it enough for swallow. Drinking the soup with a dessert spoon is so much fun.
Cooking method for chicken soup
  1. Add stock fish, smoked fish powder, seasoning, onion, water and salt to chicken
  2. Cover and let soup boil.
  3. Check for salt and add if needed. Allow soup to simmer and cook well.
  4. Like Nigerian chicken pepper soup, this soup cooks really fast.
  5. Check for chicken softness.
  6. When chiken is tender enough, sprinkle in the little uziza leaf.
  7. Stir, let it simmer for just half a minute and turn off the stove.
  8. Serve with rice or swallow.

This  Nigerian chicken soup can be served with boiled rice, spaghetti, macaroni or swallow. It tastes so great. I like it with much pepper but couldn’t add more here cos of the kids. It is best enjoyed hot. Enjoy your chicken and fish with your fingers or a fork and then drink your soup with a spoon.
It can also be served as a dessert if you like it that way.
Enjoy!

Sometimes rice with tomato stew becomes boring for me.
