How To Cook Nigerian Tomato Stew With Cowleg Beef . Cow leg stew can be tasteless if nothing is added to enhance the taste. In this case I added a little beef with biscuit bones to give taste to the pot of stew. Cow leg is nice to eat, but doesn’t
enhance food taste.

I cooked this cow leg stew to experiment the tip Ruthy gave about putting a fork in the bottom of the pot while boiling the cow leg. I also wanted to experiment with meat tenderizer.

Total time used to boil this cow leg with the fork and meat tenderizer was 2 hours. It took two hours to get really soft. I think, that time was too much compared to cooking cow leg with a pressure pot.

I also think that without the fork and meat tenderizer, it would have taken longer to cook. That’s my thoughts.

Ingredients for cow leg tomato stew:

  1. Water enough to cover the cow leg
  2. 1 Cow leg, medium size
  3. A small Onion to boil meat
  4. 1 teaspoon Curry powder
  5. Salt to taste
  6. Seasoned meat tenderizer or pressure cooker
  7. 1/2 kg Beef for taste
  8. 1 kg Biscuit bones
  9. Tomatoes stew (This stew contained seasoning cubes, garlic, ginger and pepper). You can make your own tomato stew to use.
  • Wash cow leg and boil in a pot. Cooks much faster bin a pressure pot
  • Add onion, curry powder  and salt.

 

  • You can add washed beef and biscuit bones to the pot of  boiling cow leg. The beef adds taste.
  • Add cooked cowleg to already fried Nigerian tomato stew

  • Cow leg simmers in tomato stew and is poured into a pot and left to simmer till very tender and tasty

This cow leg stew can be served with spaghetti, macaroni, boiled yam, plantain and boiled Irish potatoes.

  1. Sis Eya did u say 2hrs? Plz use a pressure cooker n d cowleg will be soft and tender in 20mins. In 2hrs I'd have cooked stew, soup, cook rice, make eba, wash up and tidy up, lol, I go don 4get say I cook sef.

  3. Nice Aunty Eya, like the ladies have said pressure cooker is faster. Instead of beef, I add bushmeat or smoked cat fish to my cow leg stew for added taste.

  5. Sam here. If I boil cowleg wit my pressure pot 4 30mins, it bcoms too soft so 20 mins is jus enuf. Nd d make is Emel.

  7. I'm loving this. Funny enough, I was boiling cowleg the other day using pressure cooker, but it had been long, and I was more used to ordinary pot. I boiled for one hour thinking 2hrs for pot, 1hr for pressure cooker. Guess what, the meat dissolved, even the bone was falling apart! LOL…waste of money, but I learned my lesson. Like those here said, 20mins next time.

  12. Hi Michie and Anon, once tomatoes begin to boil, I leave for between 8 to 10 minutes before removing from heat, wait to cool or add cold water to cool, drain and blend with pepper and onion.

  13. @ aunty eya, make sure u buy male cowlegs, use ur nails and pinch it,if it cuts or goes thru, den its soft, I use dis method a lot esp wen buyin goat meat.2. Make sure d fork is a gud,strong aluminium fork. Sumtyms a little potash helps too, just little,me na kerosene stove I dey use.aunty eya next tym mayb u can try marinating d cowleg(washn d cowlegs, add d spices, massage dem in with ur hands and put in d freezer for 1hr before boiling),I use dt method for oda meats(except shaki) and it works, hvnt used it for cowleg cos I hardly cook wit it.

  15. Depending on your pressure cooker, only open when it stops steaming. Also, to avoid heat accidents, pour cold water over the cover of the pressure cooker for one minute before opening. But not while it's on the stove o, lol…put in the sink and run the tap over the top. On how much water to use, always make sure to have lots of water, better to pour the excess out after cooking than for your stuff to burn. Most important thing is to know the timing for each food.

  16. Hi Omo,I add a glass of water or less when the tomato is very firm and dry like. When I chop very ripe soft tomatoes, I don't need to add any water to boil because the juice is enough to keep the pot from burning.

Another faster way to cook cowleg is adding Bicarbonate of soda use for baking in the cowleg.I boil my cowleg with bicarbonate of soda & because I don't really like the teast of bicarbonate so I don't add spice to it I boil the cow leg with just bicarbonate for 10 to 15 minutes its cooked then pour it out add fresh water and then add my spice & cook for another 5 minutes, pressure pot is very fast too. For those without pressure pot please try this.Thanks guys.

  18. This kind of meal I prefer cooked on an open fire. I like the smoky flavour that open fire cooking gives to some foods. But I will leave this kind of thing to my mother, or father to cook. I ain't got time for that.

  19. @Poster, if you dont have a pressure cooker, then do not add salt until it starts to boil. You can add other ingredients but dont add salt at the beginning until it boils. When you use this method, 30-45 mins is just enogh to cook the cowleg or head! this is the method I use and it works well for me.
