Spaghetti And Plantain Stir Fry By Lizzy Obaze. Here is something I prepared for the plantain challenge however I’ve used little plantain so I hope it meets the criteria of the challenge.

I prepared
this by cutting my plantain into straight finger length and  deep fried them and set aside.

  • I then fried some onions, prawns, garlic, hot chili peppers, mixed peppers, carrots and courgettes, seasoned with curry powder, dry thyme and Knorr cubes (I like  my vegetables crunchy so I didn’t fry for long).
  • I then added my deep fried plantain and cooked spaghetti and mix together.

  • I left it for 2 minutes before turning off the heat.
INGREDIENTS:

Onion,

courgette,

carrots,

plantain,

red, green and yellow peppers,

hot chili peppers,

prawns

 spaghetti

  5. Hello creative Mom, I doubt if u think chinese stir frys(if u are familiar with it) are busy coz its the same concept as what I made (without the plantain), perhaps this kind of food aint ur cuppa tea.

  7. Courgettes look like cucumber but its to be cooked unlike cucumber that doesn't need to be cooked. I'm not sure it is in Nigeria but maybe Hausa's that sell vegetables n fruits might have them.
