How To Make Vegetable Pancake Rolls At Home

Pancakes are very easy to make. Today I decided to add a little twist to my pancakes by rolling
sauteed vegetables in them. This method made the pancake a complete balanced meal with every needed nutrient. The pancake is made just like my Nigerian pancakes but without onion. The chopped onion is stir fried with chopped cabbage, curry and seasoning, it is then allowed to cool while making the pancakes. Pancakes come out of the pot into a flat surface, the stir fried vegetables are spread on top and rolled like fish rolls. Yummy.

 Ingredients For Pancakes
2 cups flour (7cm measuring cup)
2 dessert spoons milk
4 eggs
1 spoon sugar
1/4 teaspoon salt
water

 Procedure:

  1. I added warm water to sugared powdered milk, stirred and poured into the sieved flour
  2. Added a lil salt and continued to stir until smooth before adding eggs and stirring well. I add water, stir  until mixture becomes a bit runny
  3. The fry pan is heated with some drops of oil in it, flour mixture is scooped and poured inside. After like a minute or less I flip sides and allow to brown a little.
  4. The cooked pancake is put on a flat surface while the veggies are added on top and rolled.

Ingredients For Stir Fried vegetables:
  • cabbage
  • onion
  • 2 seasoning cubes
  • drops of vegetable oil
  • curry

I wish I had more vegetables at home, would have made it richer with some spring onion and carrots.

  11. I love pancakes. Apparently over here they call these crepes (they are still a type of pancake) and the thicker ones with the added baking powder/soda are called pancakes.

    i love them with sardines or corned beef mixed with vegetables. yumm!

    1. No Suzy, no other thing. Next time, use only the egg white to coat bread crumbs since you want it very crispy.

  19. eya, i tried but failed,so painful.i melted sm margarine mix eggs,sm water,milk,sugar nd salt,grinded pepper,nd my flour. nd fry in pan wit lil drop of veg oil.cnt eat dm,i threw it away.how litle shud d oil be?pls
