We have a meat pie recipe that we used shredded meats to make. It was simple. Just boiling the shredded meats and blending. INGREDIENTS: HOW TO MAKE NIGERIAN MEAT PIE WITH MINCED MEAT

We have different ingredients for the dough and ingredients for the yummy filling.

For the filling ingredients, we used:
  • 1 medium-sized onion
  • 2 large carrots
  • 2 medium-sized Irish potatoes
  • 1/2 teaspoon dried thyme
  • 2 seasoning cubes or more to your taste
  • 1 kg Minced beef or less
  • 2 tablespoons flour to thicken the filling

 

Direction for making the filling

1. Wash and cut the onion, carrots, and potatoes.

2. Stir-fry with seasoning, thyme and onion add the minced beef and seasoning cube, stir until pink color disappears. Check for salt and doneness, If the potato is not yet soft, you can add a little water and cover for about 2 to 3 minutes. Check again. Satisfied?

3. Mix the 2 tablespoon baking flour with a little water to form a paste. Add to the pot and stir until it thickens and looks kinda shiny and glossy.

4. Set aside and get the dough ready.
  • For  dough ingredients, we used:
  • 4 cups plain baking flour 
    a pinch of salt
    1 sachet baking margarine (250g)
    2 eggs to soften the dough more
    Two egg whites with a teaspoon of milk mixed to seal the edges and to brush on the meat pies
    2 teaspoons baking powder if you are using plain flour, if you bake with self-raising-flour, do not add baking powder
    120 ml water to start with. If the dough gets too soft, sprinkle in more flour. If this water isn’t enough, ie, the dough is still very hard and dry after adding all the 200 ml of water, you can still add some more water in very small quantities while mixing until your hands come out clean and free from flour.

 

Direction for the Nigerian meat pie dough

1.Sieve the flour, baking powder, salt Into a bowl, rub with baking margarine using your fingertips until they look like bread crumbs.

2. Add the eggs and mix before adding water. Do add water gradually while mixing until your hands begin to come out clean, dough is no longer sticky.

3. Wrap with cling film and keep in the freezer for about 20 to 30 mins or longer. I say freezer because NEPA doesn’t allow our Nigerian fridges to get cold o.

4. Bring out and roll but not too much abeg. Not like bread o, just a little rolling. If you want the crust thin like mine, roll flat before cutting with a round object or meat pie cutter. Brush the edges with the egg white.

5. Scoop the already cooked filling with a spoon and place in the middle, seal by brushing egg white round the edges.  Close and press with a fork. 
6. Then place on the baking tray. Repeat until dough is exhausted.

6. Bake for 30 to 40 minutes in a preheated oven r until it is cooked through and begins to brown outside. and serve hot with chill zobo drink.

There are simple steps I use when I want o to enjoy the taste of Nigerian meat pie with corned beef.

HOW TO PICK THE BEST CORNED BEEF FOR EXCELLENT NIGERIAN MEAT PIE

I have one tip for you on how to select the best-corned beef that will give you the best Nigerian meat pie if you like a corned beef meat pie.

TIP:

When I enter a supermarket to shop for corned beef, I do not just pick the first can of corned beef and head home. Basically, I try to first of all check the expiry date on the can to be sure it’s still fresh.

The next step is for me to gently feel the can with my finger or fingernail to be sure the writing is printed on the body of the can and not a label glued to the corned beef can. I don’t really check if it’s made in Argentina or made in Brazil corned beef. Once  I feel my can of corned beef and there is no paper anywhere on the body of the can, I just know I have picked the best-corned beef for my Nigerian meat pie.
