Peppered Nigerian snails snack, served HOT.
Snails, fondly called Congo Meat are a great delicacy to those who eat them. Give me snails any
day, anytime, anywhere. Take away the beef and give me snails.
For those who have stopped eating or do not eat red meat, snails are your best white meat. The fact that these molluscs are very rich in Protein cannot be overemphasized. My family loves them in soups, especially vegetable soups. Most times I close my eyes and cook without because, they are outrageously expensive in Abuja.
 
Snails can be served as healthy snack or accompanied with rice, plantain, foo foo and whatever meal you want to serve with them. They are supposed to be crunchy when cooked.
If not well prepared by washing with lime and adding straight into boiling water, they become soft like any other meat. To fully enjoy snails, make them crunchy and a bit peppery.
 
To serve this delicacy as a snack, remember to serve with your choice wine. Taking a glass of chill white wine after chewing on hot peppered snails is so much fun.

Growing up as a child, I learnt that snails were not eaten/forbidden by my ancestors. Well, I tasted and couldn’t stop eating them. To me, snail is the best type of meat, followed by chicken.  Sorry to say, but, beef is my least favorite.

Snails can be washed with alum, lemon or lime, I prefer washing with lime oranges
wash snails with limes. Alum is also used, but it changes the taste for me. Washing with lime removes the slime and still retains original snail flavor
add washed snails to boiling salted water and cook for 30 minutes for very large snails


boiled snails removed from the stock 

Blend or pound pepper, chopped onion and seasoning. I prefer to pound because that doesn’t require addition of water
add ground pepper to oil to make pepper sauce
cook ground pepper in oil for about 1 to 2 minutes
add cooked snails to pepper sauce
Stir in low heat for 2 minutes or as long as you want
serve hot snails as snacks

Snails boil, heat is reduced and allowed to simmer for 3 to 5 minutes
a pot of healthy Peppered snail stew
serve snail stew with boiled rice, boiled unripe plantain or boiled yam
Enjoy tasty snail stew with rice

Snail stew can be cooked with pepper and tomatoes. Snails must be washed with lime and plunged into salted boiling water to harden, before adding to tomatoes stew.
You want to bribe him before asking for a favor?  think no more of how to go about it. Serve him crunchy snails with his choicest wine, and remember to ask for anything while he is still eating and drinking. *wink*

  3. As a true Edo girl, I love snails and this post made me salivate.
    I make my stew a similar way to yours…The only difference is that when I add the onions to the oil at the beginning, I add a spoon of ground crayfish. It gives a lovely 'smoky' flavour.

  4. This was removed by the sellers. When I remove, I hit a hammer or heavy table knife on the tiny part of the shell, once broken, the table knife is put in that tiny hole to help push the snail out. That's the easiest method for me. While putting in the knife, stick or whatever, try to like move your hand in angles or just try to move the hand like you do when you put the key in a keyhole and try to open a lock. That action/movement pushes the snail out.

    Once the snail falls out, there is still a tiny shell inside that you need to feel with your fingers and cut out together with the waste.

  9. Yes, bicarbonate of soda is baking soda. If you go toi a cake shop and ask for baking soda, they will give you the correct one. As for distilled white vinegar, go to shops that sell things for salad or hops that sell assorted spices and stuff, they usually have it. There are two types, the Malt Vinegar which has a brown 'malty' colour, then the white vinegar which looks like water. Some big departmental stores or supermarkets also have it. I'm sorry I dnt know of a substitute for that recipe.

  10. Mehn, aunty Eya, all the saliva for my mouth don finish. I did not grow up eating snails. My parents have nothing against it but it just was never part of our protein options….just like Pork. I ate it once at a cocktail party and I wanted to lick my plate. Will definitely try it now that I am the owner of the kitchen… 🙂

  12. You can get the same effect in grinding the pepper coarsely,by using the pulse button on your blender,by pressing the pulse button on your blender,depending on the kind of blender you have. It could also be ice crush,chop, etc,depending on your blender feature. You just press,briefly,intermittently,until you get the texture you want. You just add very little water.

Aunty Eya, seriously this meal stuff works wonders, my husband sneaked in on me in the kitchen after a wonderful lunch on sunday, guess what,it was the smell of a burnt soup that woke me up later, i didn't know what happened but my husband wouldn't let me go until he had a wonderful feel of me, my soup was wasted but i can't stop glowing, trust me this one is my next weapon of man's attention.

  24. Didn't grow up eating snails. ♍Ɣ mum wouldn't let it in her kitchen. Says its forbiden. But tasted it some time in a friends house and ♍Ɣ tastebuds just wouldn't shut down after that.

  27. I love snails a lot… Just the right recipe for my wife who is comin from the USA after havin my baby girlgirl(am a first time daddy)..
