Most Nigerian men can swallow fufu every day, 7 days a week if you know how to serve with different delicious soups. Just change the soup, not egusi everyday or vegetable soup 24/7. 

The gate way to a Naija man's heart is delicious, a bit peppery soups. When you walk into any good eatery and glance around,  what do you see before nearly all the men? Eba and soup, Semovita and soup, pounded yam and soup, pounded yam with soup, starch with soup, wheat, amala with soup and so on. Even  at events, many of our menseriously eye swallow but only few actually request for because they don't like fork and knife in fufu and soup.  If there was a way to wash hands, get some privacy and dig fingers into the fufu, there will be no left overs.

Recipe: Ogbono and okro soup

Ogbono and okro soup with a sprinkle of uziza vegetables. Served with my homemade millet flour fufu,  Tastes really good with this homemade millet flour fufu and less expensive. Ogbono soup can be cooked without okra and uziza, okra soup can also be cooked without ogbono and uziza or with either. Uziza can be used in different Nigerian soups like white soup and vegetable soups. This okro and ogbono soup is like making three soups in one pot with less. The next post is going to be how to make millet fufu from scratch (Easy steps).

 I cannot even count the number of egusi soups we have on the blog already. I didn't want to share
this cos I felt there is enough already but the fluffy tuwo shinkafa won't let me be. It looked and felt so good I just have to share the recipe.  Cooking pics are so many, if they are too heavy for your browser, or if some won't open, please leave a comment let me know so I take down some pics.

Ingredients for cow tail egusi soup:

  • 1 kilo beef
  • 11/2 kilos cow tail
  • salt to taste
  • 2 knorr cubes
  • onion and 1 knorr to steam the meat
  • 1 teaspoon Pepper
  • 1 mudu egusi, that's about 5 cups or 8 milk cups
  • 1 cup ground crayfish
  • 4 medium sized smoked catfish
  • Stock fish (optional) Would have loved to add stoc kfish to this soup if I had some at home.
  • 2 table spoons palm oil
  • 1 large bunch of ugu vegetable
  • 3 cups water to start with, you can always readjust while cooking.

How To Cook Okro Soup With Ewedu Leaves

Okra soup is very good when cooked green and fresh. Ewedu leaves are good for weight loss. They are both full of vitamins which can be destroyed by heat, reason
we do not overcook these greens. For mums introducing their babies to solids, this soup is it. I think babies love this soup cos it makes swallowing fufu very easy.  Try giving them with amala, soft eba, soft wheatmeal, soft semo or any other swallow but not too soft please. This soup cooks very fast.

How to cook okro soup with leafy vegetables

Okro soup is mostly served with solids. Somtimes I cook this without palm oil and serve with a little tomato stew. When cooked without palm oil, it tastes better and I love it. If allowed to cook okro the exact way I like it, I won't add palm oil. Okro can be grated if you like timy bits. I like to chew okro in my soup. This soup can also be enjoyed without any form of swallow, especially for
those of us trying to lose some weight. I hope I've started losing sha.

INGREDIENTS: 
1kg goat meat or beef
2 seasoning cubes
Salt to taste
Water, just enough to cover the meat after steaming 
1 medium onion to steam the meat
1 teaspoon fresh ground scotch bonnet pepper. 
1/2 cup ground crayfish
1 pack dry stock fish
2 medium sized smoked cat fish
1 tablespoon locust beans (Dadawa) Optional
1 tablespoon palm oil
1 small bunch leafy vegetables. I used ewedu leaves but you can try with ugu, uziza too is great here
3 cups chopped okra

How to cook Nigerian sesame seed (Benni seed) soup

If you like Nigerian egusi soup, then you'll love this benni seed soup. Benni seed/Sesame seed is not only used for spraying on doughnuts, cakes and other pastries, can be made into delicious soup. In Nigeria, It is grown along the Benue river by the Benue people of Nigeria and some parts of Northern Nigeria. It is also grown by some parts of Cross River State. This seed is grown mainly for food while most of it is exported to Europe where a little oil is extracted e.g Salad Oil and sesame oil. It is very nutritious and filling.

Benni seed/Sesame seed soup can
be served with any swallow of your choice. I love to lick or just eat the soup alone with a spoon.

INGREDIENTS FOR THIS BENNI SEED/SESAME SEED SOUP:

1/2 mudu benn iseed (Sesame seed) About 3 to 4 cups
1kg Goat meat
1/2 kg beef
2 large smoked fish
1/2 cup ground crayfish
2 Seasoning cubes
my Pepper sauce, you can use 3 fresh peppers or more
1 medium sized Onion to boil meats
1 cup Palm oil
1 bunch Hot leaf (Uziza)
1 cup Locust beans (Dadawa)
Water to cover the meat after steaming.

Before you cook sesame soup, make sure your seed is ground and set aside. The easiest way is to let the seller clean and do the grinding there at the market for free.

We have more than enough Nigerian soup recipes on the blog already, see more soup recipes  but, just to let us cook something a bit different this weekend, I added this delicious pot of Nigerian draw soup. Try it and you will come back for more. Trust me, there'll be left over if you are not firm on the
eaters. It didn't take long to cook as the frozen beef and snails thawed very fast under running water. Someone in my house does not eat carbohydrates for dinner but could not resist the aroma and look of this soup as he walk into the kitchen. He asked for it though begging me to make the eba very small so he doesn't gain back all the calories he managed to burn at the gym this evening. What is life without eating what we enjoy? There are people who only derive joy from eating good food, aside that, life is not so sweet, so, why treat food like it's poison. Never reject good food. Refusing food doesn't make us lose weight o, in fact experts say "eat everything but in small portions" Our bodies need every nutrient to be healthy and fit.. Soup and eba doesn't make you obesed if you eat the right portion, not when we pack one big bowl of garri with soup containing two pieces of beef, three pieces of snail, fish, 3 long kpomos etc, tell me why you nor go fat explode? Eat the right quantity, nor be say you eat till you belch like shrek the movie. Eat this soup and see how fresh you'll look.

Ingredients For This delicious Nigerian Soup
  1. 1 kg Beef
  2. salt to taste
  3. 1 medium sized onion
  4. 3 cups water to start with, if soup is thicker than you want, you can gradually add water in small quanties while soup cooks.
  5. 1/2 cup palm oil: This salad master pots do not need oil, I only add oil when I cook for the kids because they are still growing, when I cook for me and hubby alone, the food is colored with a little ground tatashe not oil.
  6. 1/2 cup ground ogbono
  7. 1 cup ground crayfish
  8. 2 cubes maggi crayfish 
  9. 1/2 cup Locust beans (dadawa) This is optional
  10. 4 cups chopped okra (okro)
  11. 1 small bunch ugu vegetables (Flutted pumpkin)
  12. A handful of uziza vegetable (Optional)
  13. 4 large Snails (Optional)
  14. 3 medium Smoked catfish
  15. 1 teaspoon ground fresh pepper. I used my pepper sauce   
  16. Hot Eba (Garri) for serving with the soup. Any fufu of choice

Oats coconut fufu is made with desiccated coconuts and some oats. The quantity of coconuts is more that the oats. The aim is to eat less carb and the addition of the quaker oats here is to help with binding as coconuts have no starch. This was totally enjoyed and very easy to make. I used quaker oats and in less than 10 minutes, my fufu was ready, smooth and fluffy.

Oats coconut fufu is very good for people looking to lose weight and for those who want to cut down on carbohydrates. Diabetics can also enjoy this meal as the sweetness of the coconut is no longer there, just the chaff. Coconut fufu served with vegetable soup like this is very nutritious and great for the whole family.

 Groundnut (Peanut) soup can be cooked with or without vegetables. Here the delicious soup is cooked with very dry afang vegetable I have preserved for some time. This is the best groundnut soup yet. The little water leaf added softness and nutrition to the pot. Groundnut soup is one of the easiest Nigerian soups to cook. Nigerian groundnut soup can be cooked with any green leafy vegetable of choice. There are no strict methods, can be cooked with raw or roast groundnut depending on the taste you enjoy more. Doesn't require many ingredients to taste great. In this recession, this soup and okra soup are the first two soups I will recommend to anyone looking for less expensive delicious soups to cook.  Someone said cooking Nigerian meals can be very intense, but I promise you, cooking this soup is not difficult in anyway. Even if one doesn't have any experience with Nigerian soups, this is a straight forward kind of soup that requires neither skill nor experience. Just get groundnut and some green vegetables ready and your soup is cooked in no time.

INGREDIENTS FOR GROUNDNUT DRY AFANG SOUP:

  • 2 cups roast groundnut
  • 2 cups dry afang

How To Cook Afang Soup With Groundnut, Smoked Bush Meat, Smoked Catfish And Beef

A serving of groundnut soup cooked with afang afang leaves and served with pounded yam. I enjoy my soups a bit watery so I added some more water but you can make yours thicker if that's how you like it.
This soup can be cooked with any other vegetable of
choice. I chose okazi (Afang) because I wanted that afang flavour in my soup.

Ingredients:


1/4 part Smoked porcupine or any bush meat(Optional)
1kg Beef
1/4 cup Crayfish (optional)
1 pack Stock-fish (optional)
1 medium onion to steam the beef
Salt to taste
3 medium sized Smoked catfish
1 teaspoon ground fresh Pepper
2 Knorr seasoning cubes
2 cups Slightly roasted ground groundnut (peanut)
2 cups cut okazi (afang) vegetable
 Water just enough to cover the meat after steaming, if soup is too thick or getting dry, you can always adjust by adding some more  water while cooking.

BEFORE YOU COOK THIS AFANG SOUP; Make sure the peanuts are ground and ready, Afang vegetable cut and re-cut or roughly pounded after cutting.


COOKING STEPS:



  1. Boil beef and dry meat with salt, 1 seasoning cube, pepper  and the onion until meat is almost tender
  2. Add water to cover the meat, check for salt, then add the palm oil now before you cover and let it boil for about 3 to 5 minutes.
  3. If you don't mind fish crumbling, add the washed smoked fish now, add the remaining seasoning cube, add the smoothly ground groundnut. Stir pot, cover and leave to boil for about 4 minutes or until oil, groundnut and other ingredients mix well. If soup base is thicker than you want, leave it for now until after adding vegetables. Some vegetables release juices that can make your soup watery if you are not careful with water addition. This method is same when you cook groundnut with ugu leaves, same method but you get another great taste when afang leaves are replaced with ugu vegetable. By now your soup base should taste great with aroma filling the whole neighborhood. 
  4. Finally, satisfied with the taste and thickness, add your vegetables, stir very well, check again for salt, cover for about 30 seconds, or more if you like your veggies over cooked.  Turn off the heat and serve this delicious soup with any fufu swallow of choice like eba, semovita, weight meal, amala, pounded yam, tuwo, etc.

Nigerian Okra Soup With Tomato Stewed Chicken, Fish

This soup is very easy to cook and fast too. First,
 I made sure that  was done with cooking the chicken  and making  eba, before facing the okra soup.
It was super duper delicious! The aroma, sweet, the taste... heavenly.

Cooking Steps For This Okra Soup And Chicken:

  1. The washed, salted chicken is put in a fry pan with some chopped onion. The heat is turned on.
  2. It boils, begins to look dry, so I add some vegetable oil by the sides of the pan, cover for four minutes, checked and turned the chicken over, added a little stew before covering to simmer.
  3. Chicken boils for another four minutes before the pan is put in the microwave oven for five minutes. Chicken is turned over and left for another five minutes before bringing out of the oven and putting on paper to drain oil

Nigerian Native Soup: How To Cook Native Soup

Native soup is what some of us call white soup and then others argue that if we say it's white soup, then, there shouldn't be a drop of oil in it. Native soup can be cooked light or thick depending on what you like. This here is light. Can be thickened with pounded yam, cocoyam or achi depending again on what part of Nigeria you learnt from. Different tribes have different local names for their versions of white soup. In the South it's thickened with yam but I especially love thickening with boiled and well pounded cocoyam (A food processor does a good job making it drawy and slimy like) because of that slimy, soft kind of feel on the throat oh. Thickening with cocoyam leaves the soup in between draw and just normal. Not like ogbono but just ok. I'm not a meat person, maybe that's why I get drawn to food cooked with seafood only. I so love that there is no beef in this soup. I can live the rest of my life without craving one day for meat especially beef and mutton.
