Self rising flour has become so expensive in Nigeria in this recession but, that won't affect you if you know how to make yours right there in your kitchen with just 3 everyday ingredients. Many recipes, especially Southern recipes call for self raising flour and you don't need to skip that yummy recipe, make your own homemade excellent self raising flour and use. It's as easy as ABC. Self raising flour is used in baking biscuits, cakes, pancakes and even bread. This homemade self rising flour is what I use in my kitchen now.

In 1919 when the flu killed 40 million people, there was this Doctor that visited the many farmers to see if he could help them combat the flu.. Many of the farmers and their family had contracted it and many died.
The doctor came upon this one farmer and to his surprise, everyone was very healthy. When the doctor asked what the farmer was doing that was different the wife replied that she had placed an unpeeled onion in a dish in the rooms of the home, (probably only two rooms back then). The doctor couldn't believe it and asked if he could have one of the onions and place it under the microscope. She gave him one and when he did this, he did find the flu virus in the onion. It obviously absorbed the bacteria, therefore, keeping the family healthy.

FREEZING GUIDE: HOW LONG TO KEEP YOUR FOOD FROZEN IN THE FREEZER

Frozen food in a frosty freezer.

Freezing means that we can prepare food in bulk, and can make the most of foods that are in season like now vegetables like ugu leaves (fluted pumpkin) are in season are less expensive. If you have constant electricity and your freezer gets frosty, defrost every 6 to 12 months. If the freezer is opened often like in large households, the frost builds up often. Your freezer can become a black hole if it is a very large one and you just keep adding until things disappear to be discovered years later and thrown away- I don't think that can happen in Naija sha with this epileptic power supply.

The freezing chart below is just a guide, make sure you use frozen things/foods within the recommended period of time because storing soup for instance for longer than 2 months is not the best.

FREEZING TIPS: 

  • Once frozen food is thawed, never refreeze it because it may cause food poisoning and may not be the same. Look at ice cream for instance, once it's thawed and frozen again, it becomes crystallized and annoying.
  • Freeze soups in airtight plastic containers. transparent ones are the best as you don't need to open to see what soup is in there. Freezer bags and aluminium foil containers with lids (the party takeaway containers) are also good for freezing.
  • Some foods should not be frozen; hard boiled eggs will become rubbery, Fresh whole eggs will expand and break, Vegetables with high water content will spoil, yoghurt will separate, custards, akamu/ogi pap, mayonnaise, and food containing gelatin cannot be frozen.
  • Herbs and spices lose their flavour after 2 weeks in the freezer.
  • If your freezer has so much, label things with a permanent marker and if you can, add the date when it entered the freezer.

KNOW YOUR COOKING TERMS

These are cookery terms we come across daily, in the kitchen, market or at the dining.

  1. SIMMER:
    To cook liquid, or food over low heat, below boiling point. The surface of the liquid will be moving with a few small bubbles.
  2. AL DENTE:
    An Italian phrase used when Pasta and sometimes vegetables are slightly underdone, still with some bite. This is how pasta should be cooked, a little bit underdone, not very soft.
  3. GLAZE:
    To glaze is to brush a substance over food to give it some shine, could be jam or beaten egg. Like meatpies are glazed with beaten eggs, that's why they look shiny when baked.
  4. PARBOIL:
    To partially cook in boiling water before some other form of cooking, Rice is parboiled to reduce starch before the main cooking.
  5. MARINATE:
    To flavour or tenderize food especially meat by leaving it covered in seasoned liquid for some time before cooking.
  6. BOIL:
     To cook liquid or cook food in liquid, at 100 degrees C. When liquid boils, large bubbles break on the surface.
  7. ZEST:
     The coloured skin of citrus like lemon that can be added to food. Not the white part because that can be bitter.

HONESTLY, I WISH I WASN'T A WORKING MUM

When I was a little kid growing up in the North, my mom didn’t work outside of the home. Instead, she stayed home with me and my sisters, playing with us and cooking every meal we ever wanted to eat, teaching us things, reading the yellow hard cover "my book of bible stories' with us and prying along, caring for us, and when we got older she dusted her certificate and went back to work as a staff nurse at a hospital. HOW TO COPE WITH A SUPER SPORTS; AFRICA MAGIC LOVING HUSBAND

Hello my able wives connecion tribe and Aunty Eya, I feel like the whole world is collapsing, coming right down on me. When I met my husband, I knew he was the one. I married him after two years and promised him I would stay with him as long as he never cheated or hit me, this I said to him because I was in an abusive relationship before I met him. I knew he was lazy when I married him but I never thought it would get this bad. We have two beautiful daughters  who I love with every bit of my being, and I am now seven months pregnant. This pregnancy was a surprise. I was not happy when I found out and it took me a long time to get used to the fact that I was going to have another baby again in this tough, no tomatoes, no fuel economy. My husband has never helped with either child. Since he got fired from his job, He is too busy searching for another job in all the wrong places or sleeping on the couch with Super sports or Africa Magic Yoruba.

Good day aunty, I'm a new reader who got introduced to wives connection this year by my cousin. please I need help from wives connection. I need to know how wives and mothers manage to keep their friendships alive. I got married almost immediately after graduation in 2014. My family got blessed with twin boys in 2015 and life has been kind of "it is well" Joggling wifey duties, babies, my job etc, it  has not been easy. In Nigeria today, tomatoes might be more expensive than gold. What is really happening? These are times when most Nigerian women pray our hubbies go do the shopping because no amount of house upkeep allowance will be enough if your family consumes tomatoes a lot; In salads, stews, egg sauce etc.

Why did tomato become so expensive all of a sudden? This rainy season is when there should be tomatoes everywhere rotting in baskets beside market women. What is going to happen in December this year? Then we'll all need tomatoes in bulk for Christmas and New year celebrations? I HAD AN ABORTION JUST BEFORE MY WEDDING

Hello ma, I had an abortion four years ago and thought I had gotten over it. I was 24 years old, we were planning our wedding and I didn't want to be seen as a pregnant bride. Although my husband (then fiance) tried to convince me to leave it, I couldn't stand what other church members will think of me when I give birth earlier than 9 months after the wedding. "I'm in the church choir, what would they think of me" how will they start treating me afterwards?". There are times curiosity drives me to llook at searches that drive traffic to and land on this blog, and, I won't lie, sometimes I have a big laugh. Only Google knows how Google manages to just give the right results whether we mispell words or query with no key word. I don't know. Sometimes it's like I want to ask; "Is Google Search Engine a mind reader"? The results just come out and you find what you are looking for. Like for instance, the search queries below. I'll try my best here to to show us how I use keywords to search and get exactly what I'm looking for. It saves time when we search with keywords rather than long sentences. Some funny Google Searches and how to summarise these to keywords for better results:

1. Do not type "Please I want to know the business I can start for my wife" Rather type like below;
this search query will give you so many results you can't even read all, but, do you know that summarising that sentence to just keywords will give you the exact answers you search for while saving you space, time and energy?
