Easy Nigerian Cake Recipe (Pound Cake (2)

Nigerian Cake.
Nigerian cake is actually pound cake. It is the cake preferred by most Nigerians both at home and at events. This pound cake recipe is almost like the previous pound cake recipe posted earlier but with a few twists. For the other recipe, batter was mixed for 3 minutes, here it's just 2 minutes total time mixing. 2 teaspoons vanilla essence as against the 1 teaspoon of the old recipe. The eggs I used this time weren't as large as those used for the

Pound Cake Recipe For The Learner

Easy pound cake well baked.
This no stress pound cake recipe is especially for the learner who thinks that baking is difficult. This recipe doesn't ask that you mix anything separately before adding. All you have to do is measure and pour in a large bowl. Everything every other thing takes less than 10  minutes and your cake is put in the oven. All you need is a stand mixer because the weight is going to be much for manual mixing.

INGREDIENTS:
4 cups all purpose flour
2 cups sugar
2 cups butter ( I used 2 sachets baking margarine)
6 large eggs
1 teaspoon vanilla essence

PREPARATION:
  1. Layer all the ingredients in a bowl, start with the flour, sugar, butter, eggs and finally vanilla.

How to bake cake using sand in a cooking pot; No Oven

Delicious Cake baked using sand in a cooking pot placed on a stove top.
I have posted a cake baked without an oven earlier on the blog. However, that cake wasn't baked using sand. The baking pan was paced directly on the pot and I don't think I'll bake like that again. Using sand and foil actually maintains the pot and is neat too. This I experimented with a small sized cake and because it turned out so great, I'll bake much bigger cakes using these method in the future becaause my oven actually consumes more gas than baking in a pot on the burners. Even when one has an oven, baking in a pot with sand really saves gas because less is consumed.

CAKE WITHOUT AN OVEN INGREDIENTS:

  • 3 cups flour
  • 1 sachet baking margarine
  • 1/2 teaspoon baking powder
  • a pinch of salt
  • 1/2 cup sugar
  • 8 eggs
  • 1 teaspoon vanilla essence.

First of all I accidentally added the sugar direct to flour instead of beating it with margarine first, that scared me but the cake turned out great. Because sugar had already accidentally been added to dry flour, I had to add the eggs one after the other and beat with margarine before adding the vanilla essence.

Baking without oven procedure:
The sifted flour which already has other dry ingredients added, now begins to get folded in with the egg/margarine mixture. After all the folding in, The taste is great and by now the pot of sand has been on the stove for about 20 minutes. The baking pan is greased, some flour sprinkled inside before pouring in the batter. Foil is used to cover the sand before the baking pan is placed on the foil in the

Recipe: How to bake Nigerian Meat pie on a stove (without an oven)

Nigerian meat pie baked on a stove looks this way because of flipping to let the other side too cook through.

Nigerian meat pie is usually baked in an oven, but can also easily be baked on a stove top using a baking pan and cooking pot. This meat pie turned out as good as the ones I baked in an oven. What the meat pie needs to bake is just the heat whether in an oven or stove top. The process of making the batter and scooping in the meat and vegetable is the same (as shown on the step by step meat pie making pictures below)    The only thing I did differently here is heat a cooking pot with sand in it for about 40 minutes, cover with foil to prevent sand entering your food. Grease a baking pan, sprinkle flour in it, arranged the meat pies neatly and place in the heated pot. You can also cover the baking pan inside with foil (I didn't).  When the meat pie is cooked in about 40 minutes, I flip and leave for about 5 more minutes (This depends om how hot your stove/cooker is). For my cooker, I remove from heat after flipping and waiting 5 minutes. My delicious meat pie is ready.

INGREDIENTS FOR NIGERIAN MEAT PIE WITHOUT OVEN:

  • Use 5 cups plain flour ( 1kg is about 8 cups)
  •  2 sachets baking margarine (500g) I don't have butter today.
  • 2 teaspoons baking powder, If you using self raising flour, then do not add baking powder
  • 1/2 a teaspoon salt
  • About 400 ml water to start with, if dough gets too soft, you can sprinkle more flour, if after exhausting this water, dough is still too hard, add some more water in small quantities while mixing.
For the filling, I had some preserved in the freezer after making this meat pie and chicken pie here. Had to bring them out, mix and use. You can make the filling by following THIS MEAT PIE RECIPE HERE. Or use recipe from my first attempt at making Nigerian meat pie here

Recipe: How To Make Nigerian Chicken Pie

Nigerian chicken pie is made the exact same way Nigerian meat pie is made, the only difference here is that chicken is used instead of beef. Very few ingredients are needed and it's easy to make. These pies are so delicious by the time I entered the room and came out, only one was seen lying on the foil and the girls said they just managed to leave that one for me to have a taste of my food, Lol.

INGREDIENTS:

  • 5 cups flour
  • 500g butter ( I used baking margarine)
  • 1 chicken breast ( I bought already cooked one with Drumsticks takeaway rice, ate my rice and used the chicken breast for this pie so I didn't get to buy any chicken and there was no need for boiling before using. Lol)
  • 1 teaspoon salt
  • 500ml water
  • 4 large irish potatoes
  • 3 knorr seasoning cubes
  • 7 large carrots

HOW TO BAKE WHOLE CHICKEN STUFFED WITH NIGERIAN JOLLOF RICE

Baked whole chicken stuffed with Nigerian jollof rice, just out of the oven.

Whole chicken can be baked with or without stuffing. The stuffing makes them look fuller and more inviting and makes it a complete meal. To bake stuffed whole chicken, you can stuff with almost cooked rice, stir fried vegetables or other foods you enjoy eating with chicken. I used almost cooked very peppery Nigerian jollof rice for this stuffing and it's so good.  Preparation took just 5 minutes , baking took 1 hour 20 minutes because I like my chicken well cooked, you can bake for 1 hour 15 minutes and it will still be cooked inside. My oven doesn't have any readings so I preheated for about 15 minutes before putting chicken in. In a modern oven bake in a 190 degrees preheated oven. Will be served with the remaining well cooked jollof rice and some cole slaw.

Ingredients:

  • 1 Whole chicken
  • Salt
  • Knorr chicken
  • Maybe I should add ketchup because my ketchup loving girls rubbed some before putting in the oven.

How To Bake Biscuits Like My 8 Year Old

 Biscuits with fillings.

I need to learn how to bake from my girls.  Only two of the four enjoy cooking. One likes to beg others to cook for her when she's hungry, the other would rather eat cereals for lunch than cook for herself. This 8 year old is one of those kitchen loving 2. She asked for biscuits, I directed her to crackers.
Said she wanted Danish cookies and I
told her to either take my crackers or bake her cookies herself. Next thing she picked up her cookbook and entered the kitchen.
In less than 20 minutes I was called to come turn on the oven and before I said JACK, these delicious cookies were staring at me.

INGREDIENTS:

  • 125 grams of butter
  • half cup granulated sugar
  • 3 tablespoons milk
  • 11/2 cups self raising flour
  • 1/4 cup custard powder

Nigerian Meat Pie For This Weekend, Let's indulge a little

This is Nigerian meat pie. Freshly baked.
We love meat pie,the kids too, knowing a little history of these delicious pies can go a long way in helping us bake even more varieties. The beginning of the meat pie can be traced back to the Neolithic Period, around 9500 BC. The ancient Egyptians' diet featured basic pies made from oat, wheat, rye, and barley, and filled with honey and baked over hot coals.
These pies were eventually adopted by the Greeks, and it is there that a flour-water paste substance closely resembling pie pastry was created and was first filled with meat. In

How To Make Simple Nigerian Meat Pie At Home. Method 1

Nigerian meat pie I made with minced meat.

Below is my first attempt recipe at making Nigerian meat pie. After that, you see another recipe I used after I mastered the skill of making Nigerian meat pie.

My first attempt Nigerian Meat Pie In the Oven.

Nigerian meat pie recipe: First Attempt... Another recipe is below please, you can use any

Nigerian meat pie also known as minced pie because of the minced meat used is absolutely delicious. Meat pie is an easy to make Nigerian snack that is loved and enjoyed by many. It is so filling and yummy.
This first attempt meat pie turned out yummy and I was shocked because two things went wrong while baking.

  1. The boiled carrots I kept in the fridge were forgotten
  2. While brushing eggs on the meat pie, the bowl (egg albumen) accidentally fell from my hand and emptied itself badly on the meat pies in the baking tray. There was no way I could scoop it out.
  3. Baking started with electricity, switched over to gas then, ended up using both gas and electricity at the same time, Lol.
After baking, the girls were asked to have a taste and give their scores. They ate and continued to ask for more. My dinner was wasted because everyone ate so much meat pie that they rejected dinner. The mistake I made was baking meat pies close to dinner time.

Ingredients:

  • 4 cups plain baking flour
  • 2 medium sized Irish potatoes
  • 500g Beef which I blended myself, you can buy minced meat
  • a pinch of salt
  • 1 sachet baking margarine (250g)
  • 1 teaspoon thyme
  • 2 egg whites to seal the edges and brush on the meat pies
  • 1 seasoning cube
  • 2 teaspoons baking powder if you are using plain flour, if you bake with self-raising-flour, do not add baking powder

How To Bake Cake Without An Oven (Updated recipe)

baking cake in a cooking pot

Baking Nigerian cake is very easy whether with or without oven. What many people do not know is that Nigerian cake is actually pound cake, can be baked in a bread pan, doesn't require much mixing.
The girls and I tried to save gas at the village by baking with firewood. Everyone that ate the cake complimented it. I did not eat though because I am really struggling with reduction of my sugar intake. Visitors and family enjoyed the cake.
We did the mixing together, but the girls designed their
