Easy Nigerian Cake Recipe (Pound Cake (2)

 Easy igerian cake is actually pound cake. It is the cake preferred by most Nigerians both at home and at events.This pound cake recipe is almost like the previous pound cake recipe posted earlier but with a few twists. For the other recipe, batter was mixed for 3 minutes, here it’s just 2 minutes total time mixing. 2 teaspoons vanilla essence as against the 1 teaspoon of the old recipe. The eggs I used this time weren’t as large as those used for the


old recipe, so I increased the number to 9 eggs.

INGREDIENTS FOR POUND CAKE (2):
4 cups flour ( 500 grams)
2 cups sugar (500 grams)
2 sachets baking margarine (500 grams) (You can use 2 cups softened butter instead)
9 eggs
1 teaspoons vanilla essence
1 teaspoon banana essence.

PREPARATION:
Just like the previous one shared…
1. Layer all the ingredients in a bowl starting with the sifted flour to the vanilla essence
2. Mix slowly for 1 minute with a stand mixer, pause and scrape the splashes on the sides of the bowl, increase speed and mix again for another 1 minute, that’s all.
3. Pour into a greased pan, smooth the top and bake in a pre-heated oven for 45 minutes or till a toothpick inserted in the middle comes out clean.
4. Remove from oven, allow to stand for 10 minutes then, remove from pan and let cake cool completely before you cut and enjoy with loved ones.

  1. Hi.i like the texture of your cake amd would like to try it.can you please write me the measurement you used in grams because i found out that all cups are not the measurement.
