Here is our Nigerian puff puff with step by step recipe

There are two puff puff recipes on this post. Pick whichever you like and use. The first is so easy and straightforward
even a novice can follow. The recipe gave 28 small puff puffs shown in the first picture above:

HOW TO MAKE NIGERIAN PUFF PUFF (1)

INGREDIENTS:

2 and 1/2 cups all purpose flour
2 teaspoons yeast
3 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon nutmeg

1 and 1/2 cups warm water or enough to get the mixture not watery and not too light, just in between.
Vegetable oil for deep frying

I got 28 small tiny puff puffs from these ingredients.

Below is the direction for our step by step Nigerian puff puff making

DIRECTION:
1. Add all the ingredients in bowl
2. Mix well
3. Then, Add the water
4. Mix well again, cover bowl with napkins or towels and leave untouched for 45 minutes to 1 hour or till it rises well but do not leave for too long.


5. Fry in medium-hot oil dropping them in with your hand. Make a fist, press out the batter through the thumb and first finger. Fry till brown and serve with chill drinks.

I just looked at the plate while typing this to post and everything is gone. Plate empty. Thank God I already took a picture.

Below is our little tip for step by step Nigerian puff puff recipe.

TIP: Whenever you making puff puff and discover while frying that batter is too light or watery, you can always sprinkle in some more flour and mix well as you continue frying.

HOW TO TEST YEAST ACTIVENESS:

1…Put the yeast into a small bowl, add the warm water to it, mix well, sprinkle with sugar and set aside. If after about 10 minutes your yeast turns frothy, it’s still very good if not, don’t use it. 

This stage of puff puff making is important because if you just add everything without testing the activeness/life of your yeast. you might end up wasting other ingredientes if the yeast is no longer active.

2. Next step, Add your flour, yeast, sugar nutmeg together. Mix with lukewarm water to get a not too watery consistency and not too thick. just in between oh.

4. When you heat vegetable oil in a deep pot or fry pan till hot, start frying. when you cut in the puff puff paste and drop into the oil and it bounces up immediately then the oil is hot enough and you just continue cutting and dropping in.

NOTE PLEASE….. Don’t leave your puff puff mixture to rise for too long, like 1 or 2 hrs is ok. if you do it will lose its taste and start  smelling too much yeast.

 
 Nigerian puff puff is what I call fried bread because minus
the nutmeg in it, if this puff puff batter is put in baking pans instead and baked, that is very good bread there. Most times I like to leave the mixed batter overnight to get sourdough which is also good for puff puff.
With this picture/step by step tutorial, puff puff (oily buns) making couldn’t be simpler. Now I can go for my third attempt at puff puff making.  I promise
to make something this better next time.
You can multiply these ingredients by 2, 3 4 or any number of times depending on the quantity of puff puff you want to make.

How to make puff puff  batter;

  • In a bowl, mix in a bit of hot water with cold water to make it lukewarm, pour in the sugar, ( I used about 3 tablespoons full) nutmeg, salt and yeast, ( I used about half of the sachet I was holding in the picture because the flour I used for this particular batter is self raising) and mix everything well until the sugar dissolves. For normal white flour, use all 2 teaspoons yeast for the two cups flour.

    The next step you add your flour, I did this bit by bit because I did not want it to be lumpy and also I was using a tablespoon to mix it as against my bare hands.

    Make sure the batter is thick, thicker than pancake batter but not as thick as if you want to make Nigerian Buns.

    Furthermore, I covered it with foil paper and left it to sit for about 2 hours, notice the difference after rising with the pictures. The puff puff batter is ready.
  • Fry for about 2 to 3 minutes on one side or until beautifully brown before turning puff over, timing is depending on how hot your stove is. If you fry smaller sizes like the size of gulf balls, 2 cup flour should yield about 24- 30 medium sized puff puff.

This is how to drop the batter into the hot oil if you are a learner.  Scoop with your bare hand and let it drop through the opening between your thumb and first finger as shown in the picture above.


You can also make round puff puff without using your hands.

Frying puff puff in hot oil. The hand method of dropping batter in oil is the most effective as they turn out round. Scooping with a spoon shaped like an ice cream scoop is also very effective.

These oily buns are very soft and delicious. Be sure not to add too much water to the dough else your puff puff will turn into oil soaked pancakes.

Children love them the most. They can be served guests at parties. They can be served with jam, cut in the middle like a hot dog and rub some jam in there. Hope you understand our step by step Nigerian puff puff making.

TIPS FOR WORKING WITH YEAST:

Make sure your water is not too hot or it will kill the yeast. Water should not be hotter than body temperature. You can add a little baking powder if you wish.

  4. Hello aunty Eya.I've been trying to send u an e -mail but its not been going. Pls sorry for the disruption and help me send this to ur blog so that the good ladies can advice me. I'm a single lady of 24. I wear bra of size 32 and I'm not comfortable with this at all. When I see my friends with bigger breast, I become shy of my cup size. I'm not always comfortable changing clothes infront of my friends because their breast size intimidates me. Most times I feel that Y most guys don't ask me out is because my breasts are very small meanwhile I'm very well mannered. Pls what do I do to increase my breast to atleast a size 36? I'm greatly bothered. Neky

  5. neky, u dont need to improve your breast size but rather your self confidence, the right guy for you would come. but if it still bothers you, get a pushup bra. remember, your breast size is not a major reason for you to be asked out unless the guy wants you for sex. as for the puff-puff, thanks madam, wud definitely make it, looks sooooo good.

  11. Puff puff becomes flat when the oil is not deep enough (up to 3.5" on the frying pan). Note that it needs enough oil for the batter to sink into the bottom of the pan and come up again. Secondly, it becomes flat when the mixed batter is too watery. Keep trying till you get what you want. Best wishes.

  12. Puff puff becomes flat when the oil used in frying is not deep enough. The oil should be up to 3.5" deep. Note that the batter has to sink into the bottom of the pan and come up again. This greatly improves the shape. It can also become flat when the batter is too watery. Keep trying till you get what you want. Good luck.

  14. These puff puffs are calling my name oo. See perfect roundness. I still struggle with getting a PUFFED puff-puff. Mine is usually flat, and so gave up. Will try again with this your tutorial.
