Pancake Stacks By My 8 Year Old

Delicious Pancake stacks.

She made these for herself and little brother without supervision, without even using my pancake recipes. They cleared everything and only gave me a small piece. When she started, I asked that she writes down her ingredients so I can learn too, lol.

Pancake Ingredients:

  1. 11/2 cups self raising flour
  2. 2 eggs
  3. 1 teaspoon baking powder
  4. 2 tablespoons granulated sugar
  5. A pinch of salt
  6. 1 cup (250ml) milk
  7. 1 teaspoon margarine (she couldn’t find butter to use) For frying
  8. Another 1 teaspoon margarine mixed with the batter before frying

Procedure:

  1. She sifted the flour, baking powder and a pinch of salt into a bowl and made a well in the centre. 
  2. She then mixed the eggs, milk and melted margarine in a cup and poured everything into the flour well. She then whisked to form smooth batter
  3. Covered the batter with cling film and set aside for 20 minutes. (If you an adult wants to try this, you could mix your batter with a food processor).
  4. Heated a frying pan and brushed lightly with melted butter, poured some batter and cooked over low heat until golden ( It started rising while cooking over low heat). She turned it over and cooked the other side quickly, transferred to a plate and kept warm while cooking the rest.
