My new lifestyle and weight loss journey day 3. This is how to lose weight with Nigerian Food

Today, I have danced and danced so much even though I still be dance learner. Not sure if it’s my new size giving me the HIGHS, and old small trouser fitting again or the sound of hit songs from the radio. The music scatter my brain, I haven’t felt this kind of way in a while but someone says it’s not the music, that my weight loss progress is what’s making me happy.

Any of the above sha, I’m just in a dancing mood. The scale digits still dropping. After yesterday’s fast, I ate so much dinner that I just had to brace myself for a little weight gain, but for where? na lose we still dey. See me standing on the scale below. New weight stands at
82.5 kg. Thank you Father!

My workout routine was awesome, I felt great even though I wish I can record longer workouts. I wanted to continue and complete 10 minutes workout video but the small camera couldn’t find enough space to save more content.

This my no hunger in the morning style is not a permanent thing sha, though I like it. Sometimes, especially when I’m very busy, that happens, then when I’m free and more relaxed, as early as 7am I feel hungry and when that happens, I don’t starve myself lie lie. I eat the breakfast wella.

I don’t forbid breakfast oh. Like I said some days back, these days I can’t find time before noon to eat and the hunger too is not there, that’s why even today, breakfast happened at noon. The garden egg (egg plant) that was left over from breakfast, I ate by 2pm and nothing more. Then at 4;30pm ate the dinner for the day.

BREAKFAST/BRUNCH

Boiled egg sandwich with vegetables…
2 boiled eggs
3 small carrots
1 slice bread
Mayonnaise spread
2 garden eggs (Left over)

DINNER:

HOW TO COOK PLANTAIN PORRIDGE WITH TOMATOES AND GREEN VEGETABLES:

Nigerian plantain porridge with fish and vegetables.
INGREDIENTS:
4 small fingers plantain
1/2 mackerel
1 egg
Fresh peppers (I used 1 tablespoon of my pepper sauce)
1 large onion(I love  onion, it’s the most used ingredient in this kitchen)
3 ripe tomato fruits
1/2 cup palm oil
1/2 cup vegetable oil (I used soya oil)
1 small bunch green amaranth (Aleho)
2 seasoning cubes
Water
There are plantain porridge recipes on the blog already. I don’t know if it’s ok to still post this.
BEFORE YOU COOK THIS PLANTAIN PORRIDGE;
Get all the ingredients ready. Wash and peel the skin off the plantain, cut in small pieces the shape you want and set aside. Pluck, wash and cut the vegetables if they weren’t cut at the market. Wash and dice the onion and tomatoes. Steam the fish with some salt and onion, break the egg into a bowl and whisk briefly, set all aside.

COOKING DIRECTION: weight loss gree vegetable plantain porridge

  1. Remove the cooked fish from the stock and keep aside while you use that stock to cook the porridge.
  2. Add some water if the stock is not enough, add pepper, 1 seasoning cube and the plantain. Check for salt and cover to cook for about 8 minutes as you regularly check and stir the porridge.
  3. As the porridge cooks, grease and heat a non stick fry pan to help brown the fish. Drop in the fish one after the other when the pan is heated and flip over when one side is brown. Remove from heat and set aside.
  4. Add palm oil and cover again to cook for another 8 to 10 minutes as you stir regularly to help it thicken. Check for salt and taste. Ready? Turn off the heat.
  5. In another pot, heat the vegetable oil, add the remaining onion, pepper and tomatoes with the remaining seasoning cube. Stir very well and add the whisked egg. Leave to boil for 1 minute before stirring. Check for taste.
  6. Finally, add the green vegetables and continue to stir until it begins to wilt. Quickly remove from heat.
  7. Empty the cooked plantain porridge into the pot of vegetable stew and mix  very well. Check for taste again.
  8. Serve with the fish you set aside.NB: This quantity serves 3.
