  Potato And Smoked Fish Frittata (yokes apart) By Furo.  My name is Furo, I always read your blog but hardly comment except I want to correct food posters who cook in a pot and name the food “so so caserole*RME*

So, Last night I was ‘food blog-trolling’ and came across Lohi’s Creation post on egg and ham frittata where she used baked/fried plantain, initially I planned on baking potato wedges and serving with gizzard&

cow leg stew for today’s breakfast but as I saw her post, I decided to make a frittata with potatoes and smoked fish for breakfast this morning,I removed the egg yolks(cholesterol free, yay!).

hence the name in bracket, but you can leave yours, I also left the potato skin because
it’s more nutritious, you can take out yours, it’s all a matter of choice. I believe this is what we call ‘tasty fiesta’ in Nigeria…


INGREDIENTS


4 large Eggs
6 Large potatoes
1 medium sized smoked sardine
One medium sized onion
1 wedge of cabbage(optional)
2 tomatoes
1 green pepper
One  sweet red pepper
1 tablespoon ground scotch bonnet
1/2 teaspoon curry
Hakf teaspoon tumeric
1/2 teaspoon freshly ground black pepper(optional)
1 seasoning cube and salt to taste.
1 teaspoon oil to grease pan


COOKING METHOD FOR Potato And Smoked Fish Frittata  


1) Assemble your ingredients.


2) Thoroughly scrub the potatoes and boil for 12minutes in salted water, drain and set aside to cool.


3)While potatoes are cooling off, slice and dice the vegetables, Wash smoked fish, remove skin, tail, head and bones, eat fish egg :D, shred the cleaned fish, mix with vegetables and set aside (try not to eat the fish salad before you).


5) Crack eggs into a bowl, remove yolks, add in scotch bonnet, tumeric, curry, seasoning cube and salt, whisk, set aside.


6)Preheat oven, Chop the potatoes and add into the bowl with vegetables n fish, gently fold in egg mixture and stir, check for seasoning.


7) Grease your frying pan/skillet, pour in the mixed goey beauty :D, pop into the oven and bake for 30 minutes or till a toothpick comes out clean when inserted.


8) Take it out, cut into desired slices and eat up immediately or make a cup of green tea like I did and enjoy your breakfast.

  3. Potato skin contains glycoalkaloids I think. I studied FST and I remember glycoalkaloids n solanine from my food toxicology class. *just saying*
    I can only admire the pictures and salivate because am trying to lose weight 🙁

  4. Furo! This love yummy, pls can one fry? I don't know how to use my oven bcos anytime I try to bake, it gets burnt. Also can fresh fish be used instead of smoked fish.

  5. You can use fresh fish, just season it and add, you know fish cooks fast so you don't have to worry about it tasting fresh. It can be fried but the problem will be flipping it over for the top to cook. You can read your oven manual for operation or put the stuff at the top part of the oven rack, that way the heat doesn't get to it that fast.

  6. Hi WC family. I need some information. This is unrelated 2 dis post. I use a lot of coconut oil and usually I grate d coconut with a grater. I read here that a blender can be used, so I did as instructed- cut d coconut into small pieces added a little bit of water, then blended. It did not become smooth( it remainded as it was despite d very loud noise d blender was making) because I had cut d coconut really small, I couldn't now grate them.
    Can anybody tell me the right way to blend coconut for coconut oil. Thanks.

  7. Nice 1 Furo, very similar to omolette.
    Amaka this is quite healthy (without the potatoes) as it contains lots of veggies, protein and cooked in the oven rather than fried. Also fills one up and you can have it with some salad.

  9. Cut coconut into smaller pieces after removing d hard skin. Pound wt a mortar ist b4 transferring to ur blender. Doing dt wil reduce the damage it wl cause ur blender.

  11. @anon 6:19- u may need to add a little more water to enable d cocnut move freely inside d blender. And try not put too much cocnut @ a time. And u may have to blend one badge of coconut multiple times to get the smooth texture before before blending another badge. So u don't end up wiv watery milk, pour d cocnut into a sive and use d milk from d first bagde to blend d next one!

    I pray you get to see this early and post early because I am in a really confused and angry state of mind now. My husband and I were married for almost a year without a child and although he kept telling me not to bother,I did bother and cry to God because he would misbehave (cheat) and when I found evidence would tell me that I should be concerned about important issues which of course I knew the meaning.
    Fast forward to now,just few weeks to our anniversary,my God answered me but my husband wasn't exicted,he beat me twice during the early stage of the pregnancy.he believes in the don't talk back to me approach of life,meaning I shouldn't explain myself even when he accuses me fasely. My family and friends find this irritating but he refuses to change. To save my home,I learnt to trim my mouth.people insult me for becoming a mumu.
    I'm almost due now and problem is I keep catching him doing funny stuvs on 'what's up and it upsets me.Last week we had a serious argument just three days after I had sleepless nights staying by his side in a clinic as he had malaria.he has a female tailor who has guys sewing clothes under her.they never make the clothes on time or spoil the style,use washable threads,wrong designs,etc and what pained me last time was that they delayed the cloth and she instructed them to change the style without consulting my husband.I told him that he had earlier promised to stop using her,I introduced him to a tailor used by most men who love fashion here but he still went back to her.we were 'holidaying' at dubai two months ago and guess who called our line?said my husband's friend gave her the number.her excuse was that we should help deliver her wedding gown to her! After two other calls,she said we should help her buy certain items,I told my husband it wasn't going to happen.I know he spoke to her because she stopped calling.
    We just keep having arguements,he acts nice today then cruel tomorrow.tell him he doesn't satisfy you,not just sex,show me,buy cards,take me out,kiss me and carress me because those are better than sex yet he won't. He wakes up daily by 5am,heads to toilet with his phone and when I sneak up on him he says he is blogging and reading updates.well,days ago found out he was chatting with a suppose ex girlfriend!not even up to 6am!people including some friends he has seperated from now have said he married me because of my family wealth and my job(we work in same company) but I ignored them.the story many
    Bottom line is I started having contraction that day but thank God I was given drugs and all and getting better.my dad has never interfered in our marriage but because he cried that day out of fear of losing his grand child,he said I should move back to their house,my husband can come too just so we don't kill ourselves or hurt the baby.my husband hasn't come to see me,called only once and when I told him my stand,he abadoned me.he is never there when am down or ill even when I had an operation.I'm confused because even my friends know how he begged everyone until I agreed to marry him and now this.
    I feel I'm protecting my baby or am I wrong?sorry this is long but I even reduced the talk.please you guys advice me.

I won't stoop so low to do this cyber banter with you @ Oshisco, if you like, don't take corrections, and please google up frittata if you don't know what it means, unlike your type, I didn't just jumble words together to create a name. Dear garri soakers, who ever said sardines are not for cooking? So I should have bought catfish worth 5k because I want to impress anonymous people??Don't kid yourselves and quit the forming, even mackerel(shiny ice fish) can be used to make amazing dishes, be creative with your food and maybe your husbands will come home often and you won't come crying to aunty Eya over everything.

  17. In other news, I tried lohi's version of the frittata( with plantain) yesterday, my God! It was soooo good, tastes way better than potato frittata because of the sweetness of ripe plantain(obviously),I made it with 1 ripe plantain, 3 eggs, vegies and half of 1fish, I couldn't even save some for my peeps, I ate everything up, it could easily become my favorite food.
    Please I urge you guys to try it, just bake or fry the plantain 1st, then dice it up before adding with the other mixed ingredients then bake for 20minutes, you won't regret it!
