Agidi can be served for breakfast, lunch, or dinner. What
matters is the quantity one eats at any given time. It is  a very balanced meal. With the way
my girls rushed this meal, I am now convinced that agidi with stew is a delicacy for most kids. I think this is a meal that children cannot resist. So easy to make and eat.
Agidi can be made plain like this, or jollof with all the ingredients fried before adding water. Agidi, whether plain to be eaten with stew or jollof, is fun to eat.
When I make agidi jollof, I add cooked biscuit bones before wrapping the leaves. Sometimes I also add coconuT milk but not on this plain agidi method.
Th bones make it more yummy and fun!

How to make plain agidi with stew at home . Agidi is also known as eko by the yorubas.  It’s easy to make.  This Agidi recipe is easy to follow and replicate.

Mixing corn starch with some water
mix cornstarch with a little cold water
.
pour mixed corn starch in a pot of salted  and oiled boiling water
.
 stir akamu briskly to prevent lumps forming
Corn starch is cooked. in a pot Ready to wrap as agidi
stir akamu until corn starch  is cooked

Ingredients for how to make plain  agidi with stew at home

  • corn starch (akamu)
  • broad leaves
  • Salt
  • vegetable oil salt water
  • Tomato stew
  • fold one part of broad leaf under the other
  • bend lower end in and pour in akamu or moi moi through the opening

  •  bend both ends in to complete folding

Place wrapped hot agidi in a tray and leVe to cool and harden. 
serve agidi with hot stew
eat agidi mixed with stew

How To Cook plain agidi (eko) at home

  • Boil some water with salt and drops of vegetable oil
  • Gradually pour the cold water akamu in the pot of boiling water while stirring fast enough to prevent it getting lumpy
  • Check for salt and thickness, if too thick, add some more water
  • Rub some vegetable oil on the washed broad leaves to prevent agidi sticking to the.
  • Fold leaves as shown in the pictures and pour in the hot agidi
  • wrap properly  and allow to cool and harden before serving with hot stew.

It is the first time my kids are eating plain agidi. I wanted to give it a try and see how it goes. To my surprise, they just were eating, praising and asking for more.

    How true is dis statement dat food prepared with firewood,tastes much better than d one prepared with gas cooker or stove?

  3. Hi Tina, I will try. The process is the same as this here. The only difference is that for agidi jollof, you fry all the ingredients in oil with onions, before adding water and the raw corn starch.

  9. @Bonario,moi moi cooked with leaves has a natural leafy flavor in it. There is no difference between firewood and gas cooked food, to me, it depends on the ingredients and how the food is cooked.

    The only thing I am sure of is that drinking water boiled with firewood has a funny taste.

  11. Hi Omalicha, the ingredients you use to make stew. If you have stew at home, then fine just add it to the boiling water before you add the coconut milk and raw akamu. If there is no stew at home, fry tomatoes, onion, pepper, seasoning and other things you use for stew, just like stew, then add water, coconut milk and raw akamu. Hope this helps.

  13. Wow! Ds brought back memories, i ate agidi jolof last shld be 15 yrs ago nd snc d woman dt sells it moved away frm area, av neva come close to it. Can u imagine? All this time i thot agidi is made out of jolof rice, how naïve… Lol
    I woudnt mind to Get a clearer explanation on it. Can't wait to give myself agidi treat. Plssssssssss.

    @Eya: please do you know this agidi that has sugar. It is usually harder and dryer than normal agidi. My grandmother used to give me when I was very young and I still can't forget it, though I haven't eaten it in years. Do you know how I can make it? Pleeease

  15. Lol@ Agidi that has sugar! Make it with this normalk agidi recipe, instead of salt and other ingredients, just add sugar. Chei!
    Be careful with adding water, a lil is Ok, so that it will turn out very hard when dry.
