frying dodo ( ripe plantain) in hot oil
The recipe is the same as RIPE PLANTAIN WITH FRIED BROWN BEANS. The only difference is the color of the beans and the palm oil I used to fry this beans, crayfish, onions and fresh red peppers. Frying boiled white beans (black eyed peas) with vegetable oil gives it another nice taste. The color is not inviting though.To get that unique taste, do not forget crayfish. Sometimes, I do not fry the beans, but with the crayfish and fresh pepper added, there is a different great taste. Dodo and beans is one meal I over feed myself with a lot of times. Like a child, I do not know when to stop. I love me my dodo with boiled, then fried beans. |

ReplyDeleteHi Goodie, the water wasn't much, so I didn't sieve. After boiling, if the water in the beans is much, reduce it to what you want before frying.
